Deep, heavy, and with a long memory. The pan-fired character lights up an intense, toasty, minerally cup with an aftertaste of roasted grains. Steep at 175°F to soften the approach or 195°F+ to brave the full effect.
An exemplar of the potency of Xihu Long Jing (English:West Lake Dragonwell). Produced on April 9, 2022 by Mr. Chen Jun Jie, it’s a one leaf and one bud pick from the Qunti cultivar growing at approximately 1,000 feet in the Xihu district of Hangzhou city in Zhejiang province. The iron wok is the signature tool to producing Dragonwell. The practitioners of this tool go through years of training where they learn the ten hand techniques and develop the iron palm that becomes conditioned to the heat. The flat leaves of Dragonwell are evidence of their craft.
